Recycling: Banana Bread

There is nothing that I love more than a bunch of rotten bananas. I really love them when they are so overly ripe, I question if I should use them or not. This is a great recipe for 'recycling' food. You can use something you would normally throw away.
Here is my recipe for banana bread. I can mix this up in 10 minutes, nothing fancy required.
Mix in a small bowl and set aside
1 1/2 cups flour
1 1/2 tsp baking powder
1/4 tsp baking soda
Mix in a large bowl in this order
1 1/4 cup mashed bananas (3 large)
1/2 tsp cinnamon
1 egg
3/4 cup sugar
1/4 cup oil (vegetable or canola)
Add in flour mixture. Grease a loaf pan and bake at 350 for about 50 minutes (or so). I have doubled this recipe and it works fine. You can also add nuts if you like.

does making kale chips out of leftover kale count as recycling? i'll keep thinking.

Um, that's strange. There was no banana bread at the office this week. Hmmm. Nero must have ate it all.
I always assumed banana bread was complicated. I'm so glad to learn it's not! I believe there are about three bananas going bad in my kitchen right now... I know what I'm going to do with them!
I throw the brown bananas in the freezer if I don't have time to make banana bread immediately. I'm going to try this recipe this weekend. Thanks!
@ Melissa You won't be sorry, sometimes I hide the bananas and let them go bad so Susan has to make it for me! Enjoy
