Blueberry Delight

Trying to wait out these last few days of rainy weather has got me really anticipating the summer. All the fresh produce, seafood and summer desserts!
When I was a kid, my dad had blueberry bushes in front of the house. We would pick them and put them on anything, especially pancakes. So it's no wonder that I like blueberries in any dessert.
Here is a little dessert we whipped up with some fresh blueberries, italian cookies, Cointreau and whipped cream.
Ingredients
Makes 4 servings
1 box of store bought Italian cookies such as lady fingers
1 pint blueberries
Cointreau, 2 jiggers divided among 4 servings
Homemade whipped cream
Directions
Layer the cookies and blueberries and pour Cointreau over the top. Top with a nice spoonful of whipped cream and find a nice place in the sun to enjoy!

As a former Mainer, I sympathize with an addiction to blueberries. When I was a kid (and up through...cough...last summer) we could barely fill our blueberry baskets while picking-- we'd eat them right off the bush! Can't wait for the season to start up here in New England.

We used to serve fresh summer blueberries with a dollop of sour cream and a sprinkle of cinnamon. Yum!
oh Yum! When I crave some dessert, I always think of recipes that are complicated and time consuming but this just reminds me how the simplest of ingredients can make some truly mouth watering.
