Poached Plums with Cotton Candy

Here is a quick summer dessert you can make with any fruit, stone fruits works best. This is a favorite for a dinner party. And who doesn’t love the surprise of a little cotton candy?

Poaching Plums

Ingredients

  • About 6 plums, halved
  • 1/2 cup of sugar
  • Half a vanilla bean
  • Dash of nutmeg

Directions

  1. Create a poaching liquid by adding 2-3 cups water to a wide bottom pot or pan. Stir sugar, vanilla bean and nutmeg in over medium heat. Wait for sugar to dissolve.
  2. Add the plums to boiling poaching liquid and turn down to a simmer. Liquid should cover most of plum, add extra water if necessary.
  3. Poach 3 minutes each side and serve. If you don’t have cotton candy, whipped cream or vanilla ice cream is a perfect stand in.
